Bounty Hunter is the replay mode Red Dead Revolver opens once you beat the story. Most story chapters come back with one extra objective, like a headshot-only run or a combo over a set dollar amount. Beat that objective and you get a Showdown character, a Showdown stage, a shop item or a cheat.

Chapters 1 to 9
Chapter 2 is a story level that shares the mode's name, so it's listed as Twin Rocks to keep the two apart. Every chapter in this range pays a Showdown character and a shop item.
Chapters 11 to 18
The rewards change in this range. Chapter 17 is the first one that pays a cheat with no Showdown character, stage or shop item.
Chapters 20 to 27
This range pays out cheats only. No Showdown character, stage or shop item comes from these chapters.
Run the late chapters first for cheats
Chapters can be replayed in any order, and the order decides what you have on hand. If you want Showdown characters first, start with the early chapters. If you want cheats first, do Fall From Grace, The Siege and Battle Finale before the rest. They pay out Invincibility, Golden Gun and Infinite Deadeye, and those cheats are ready for every run after. You have to clear each challenge to earn its cheat, but cheats you've already unlocked can help on later Bounty Hunter runs.
Golden Gun and the combo chapters
Carnival Life, Freak Show, Range War, Fort Diego and End of the Line all ask for a combo. Golden Gun comes from The Siege, so clear that one first if you want it for these. Turn Golden Gun off while you build the combo, then back on once it's done so the rest of the level goes faster.
Chapters that skip Bounty Hunter
The Traincar (Chapter 4), The Cemetery (10), Jailbreak (16), Hell Pass (19), Devils and Angels (22), Battle Royale (23) and House of Cards (26) stay story only. Story Missions marks each mission's Bounty Hunter status.
Rating targets and story rewards
The Excellent rating needs at least three of the stats on a chapter's target line. The Good and Excellent story rewards are separate from the Bounty Hunter reward, so you can earn both. Chapters 9, 18 and 21 have no rating targets or score-screen rewards, so the Bounty Hunter reward is the only payoff there.
Why didn't my reward show up?
Rewards come after you clear the objective and finish the level. Bail before the level ends and nothing comes through, even if you already hit the objective. Run that chapter again and see the level through.

Which Showdown characters come from Bounty Hunter?
Falling Star, Curly Shaw, Twiggy Phelps, Sheriff Bartlett, Fidgit, Professor Perry, Sidney "Sissy" Fess, Dig Fowler, Smitty, Natalie and Grizzly. Chapters 13 and 14 pay Showdown stages instead of characters. Story rating rewards can add more characters, and Showdown characters covers those.
Is there a PS4 trophy for Bounty Hunter?
Yes. On PS4, the Out For Blood trophy unlocks for finishing every Bounty Hunter chapter.
