Every grave you visit counts toward Story Mode 100% and the Paying Respects achievement. None can be missed, so you can take them in any order and at your own pace. Most of the work is finding the landmark for each stop, not the visit itself.

Grizzlies
Story spoilers ahead, including the ending. This is the northern start of the run, so begin at the snow near Spider Gorge and work south from there.
Roanoke Ridge
Bayou Nwa
The graves here sit under the same shared tree north of Saint Denis, and each marker needs its own press. Don't head off after the first marker.
Scarlett Meadows
Spoiler warning: the grave list and the notes below name characters who die during the story and mention who you play as after it.
When Graves Become Available
The full set opens after the main story. For a sweep that covers every stop, start in Epilogue Part I and play as John.
How to Visit a Grave
Ride to the landmark for each stop, then press the prompt at the marker. Some sites hold more than one marker, and each needs its own press, so check around before you leave.
How Progress Counts Toward 100%
The full set adds up to 3.4% of total completion. To see where you stand, open Pause Menu > Progress > Total Completion.
RDR2 Grave Locations and Route Order
The route runs north to south through the Grizzlies, Roanoke Ridge, Bayou Nwa and Scarlett Meadows. Use each grave's named landmark for the final approach.
Story Missions and Other RDR2 Collectibles
For the story leading up to the Epilogue, see Story Missions. If you want another collectible to chase, Dinosaur Bones covers the exploration hunt across the map.
